THE restaurant was nicer than anywhere Theo had been in a long time. It was in an old converted barn, or at least that was what it looked like to him. But the walls on the inside had been whitewashed and the floors polished until they shone. Simple tables were arranged with plush chairs surrounding them, and long chandeliers splashed light on all the walls, which were adorned in wreaths made of sticks and leaves and dried berries. It was rustic yet sophisticated. It looked exactly like something Heath would find.
“Where did you hear about this place?” he asked.
“I did some googling. I like trying local restaurants. They don’t have to be fancy. I love the farm-to-table concept, and this place uses produce and meats and cheeses that are all local, as much as possible. I think it’s a great way to run a restaurant. Keep the local traditions alive… or bring them back. We’ve lost so much of that over the years.”
Theo realized in that moment that it was something Heath was actually quite passionate about, another little nugget of who he was and what he stood for. “You really care about the local thing, don’t you?”
Heath nodded. “I know it sounds all Jamie Oliver of me, but it’s not just about food and farms. So much of our world has turned into mass-market junk shipped from all over the world, made by the thousands so everyone can have the same matching item. I mean, it’s been like that our whole lives. I think it’s a shame.”
Theo hadn’t ever really thought about it. But it was. “I guess I can see your point. Takes away from the personalities of different regions, doesn’t it?”
“Yes. And I do what I can to support local businesses and farms. It’s like, one person at a time. That’s really all we can do.”
Theo had a new respect for Heath. It made sense that he didn’t want the small local farm to die; it was something that he’d be passionate about if he owned land too, of course. But Theo still liked how much he cared. “Do you guys sell to places like this?” he asked.
“There are local markets, farmers’ markets and such, and yes, restaurants like this one that buy from local farmers. I think the chefs were the first ones to get it. That the foods they can get from down the road taste so much nicer than things that are shipped from across the ocean. We do get fruits from Spain and Italy, things that don’t grow in soggy old England, but the effort is there.”
“I’d imagine it’s here too. In some places, at least.”
“Yes. It’s growing. But I didn’t bring you here to rant about local farms.” Heath laughed. “I could talk about that all day, and you’ll pass out in your soup if I don’t shut up. What did you do today? Tell me about it.”
Theo grinned at him. “It’s not all that different than what you’re talking about. Just on a smaller scale.
